We are what we eat!

We are very happy that we finished the process for our organic (BIO) certification! We’ve cooked bio before, but are entitled to refer to it as BIO now!

Which is why we serve healthy and balanced diets to our young guests at Schloss Leizen. Last week we went a level higher and finally got our official certification as an ORGANIC FOOD provider. We can now openly announce that almost all of our suppliers are organic certified (mostly German regional) companies. The two major exceptions are our long-term local partners that deliver excellent quality milk Van der Ham (from the nearby village Bollewick) and fish Die Müritzfischer (from Waren an der Müritz).

Veggie burger recipe

This is our version of a veggie burger. Fresh, crisp and healthy. Our Anastasiya​ obviously had a lot of fun making it 🙂

Do you know what makes a veggie burger so delicious? The patty of course!

You will need 300g mushrooms, 1 garlic clove, ½ onion, salt, pepper, 2 organic eggs, rosemary, 4 tablespoons organic oatmeal, 2 teaspoons organic rice flour.

🍀 Dice mushrooms and the onion into cubes

🍀 Finely chop garlic and rosemary

🍀 Then add rice flour and oatmeal

🍀 Whisk eggs and mix them with all the above mentioned ingredients

🍀 Season it with salt and pepper and let the mix rest for at least 15 mins.

🍀 Form small burger patties, put them into a preheated pan and fry them until golden brown.

For a beetroot salad, which complements the mushroom patty especially well:

🌰 Peel and slice 1 beetroot

🌰 Season it with 1 tablespoon apple cider vinegar, 1 tablespoon walnut oil, 1 teaspoon honey, some mustard and salt to taste

🌰 Marinate for 10 mins. and mix with lamb’s lettuce.

Here we go!

🍔 Cut a burger bun in half and toast both halves either in a pan or on a grill, cut-side down.

🍔 Spread a topping of your choice on the cut sides of the buns (we mixed sour cream with honey and mustard and added salt and pepper to taste).

🍔 Place a mushroom patty on the lower half of the bun, top in with some beetroot salad, lettuce and sauce.

🍔 Then cover with the top half of the burger bun.

Mmmh! Bon appetite!

Can Healthy Food be Delicious from a Teenager’s Perspective?

While their parents like to see their kids eat a salad and a nice piece of meat – kids simply love to eat burgers. At Schloss Leizen we’ve found a solution how to let kids enjoy their favorite food and parents feel assured that their kids develop healthy food preferences.

Make your own patties for burgers!

You need (for 4-5 burgers): 1 kg organic ground beef, salt & pepper

📌 Season ground beef with salt and pepper

📌 Knead until the mass becomes sticky

📌 Form patties, either by hand or with a burger press (make it a bit wet so it doesn’t stick)

📌 Grill the patties or cook them in a flat pan, flipping them around frequently until golden brown.

📌 After flipping the patty, you can also place a slice of cheese on each patty and grill until the cheese has melted.

Here is the way how to make a perfect burger:

You need: Burger buns, patty, your favorite sauce and filling (cheese, salad greens like Iceberg, lamb’s lettuce, rocket, tomatoes ect.).

🍔 Cut a burger bun into halves and fry them in the pan or on the grill, with the cut surface downwards

🍔 Brush sauce of your choice (ketchup, mayonnaise or smth else) on the cut sides of the buns.

🍔 Place a patty on the lower half of the bun, add some tomato salad, lettuce, cheese

🍔 Then cover with the top half of the burger bun.

We also recommend adding some tomato salad (which is very easy to make and tastes so cool!)

Just cut 250g cherry tomatoes into quarters, chop 4 leaves of basil finely, add some onion, 1 pinch of raw cane sugar and 1 tablespoon oil. Mix everything together. Ready!

Berry Shortbread Cookies Recipe

Kids in Leizen always love to know what is going on with the Schloss. Check out how they test the recipe for ORGANIC COOKIES to be handed out to the participants of the Association of German International Schools (AGIS) Conference taking place in Hannover this coming weekend. Schloss Leizen prides to be a sponsor and will be presenting its residential class trips and holiday camps this coming week-end.

INGREDIENTS YOU WILL NEED:
300g organic spelt flour
200g organic cold butter
100g organic raw cane sugar
1 organic egg, size L
1 pinch of Vanilla powder
Peel of ½ organic lemon

To gain a fruity taste, we use 6 teaspoons of either: raspberry powder, mango powder, blueberry powder & strawberry powder.

HOW TO MAKE THE PERFECT COOKIES!
1. Mix the spelt flour with vanilla and the relevant fruit powders.
2. Transfer this mixture to a work surface and form a well (hole) in the middle.
3. Cut cold butter into cubes and place them into the well. Also add the sugar, lemon zest and the egg.
4. Quickly, knead everything into a dough, cover it with cling film, and let it rest in the refrigerator for 45 minutes.
5. Finally, form the dough into desired shapes. Bake the cookies in a pre-heated oven at 400°.

Baking with boys

Boys. Fun. Baking. How do the three go together?

Very Well is the answer!!!

Especially if you have two hours of intense excercise and football, followed by a delicious warm lunch – the kids couldn’t be happier to join Chef Maik to bake their own pastry for tea time.

Of course with apples !!!

                               

Here is the recipe:

🍕 Dissolve 1 tsp organic cane sugar in 240 ml lukewarm water.

🍕 Add 42 g of yeast, 500 g organic spelt flour, 1 pinch of salt and 80 ml of vegetable oil (we used safflower seed oil).

🍕 Mix everything thoroughly and knead until dough is smooth and elastic. It will make pizza airy and light.

🍕 Let the dough rise for 1 hour.

🍕 On a floured surface, roll out the dough and let it rest for another 20 minutes.

🍕 Add the toppings of your choice. For extra sweet pizza: slather the top of the pizza with jam or sour cream and add your favorite fruits (we used apples, of course J).

🍕 You can also sprinkle the flaked/sliced almonds, cane sugar or cinnamon over the top.

🍕 Bake at 200 ° C (fan oven) for about 15 minutes (depending on the size of the pizza and the thickness of the topping).

It’s time for pizza! 😋

This weekend just gone we had our Reunion Summercamp and one of our favourite activities was – Brussel Sprouts Forever.

We may like or dislike eating Brussel sprouts. But we enjoyed finding out how they grow (thank you Farmer Huschke)…
